Mondo's Kickass Butter Chicken Curry Recipe

Ingredients
- 2 tbsp onion powder
- 2 tbsp garlic powder
- 6 tablespoons butter
- 3 teaspoon salt (adjust to taste)
- 3/4 teaspoon ginger
- 3 cups heavy whipping cream
- 3 cups tomato puree
- 3 tbsp garam masala
- 3 tbsp lemon juice
- 1 small package Sazon Goya
- 2 tsp chili powder
- cayenne powder (to taste, for spiciness)

- naan bread / flat bread
Instructions
- Heat butter in a large skillet or pan over medium heat. Add onions, garlic, ginger, chili powder, and salt. Cook for another 2-3 minutes.
- Add tomato puree, sazon goya, and garam masala to the pan, stirring well to combine with the mixture. Cook for 5 minutes, allowing the flavors to meld together.
- Add the chicken pieces to the pan and cook until they are browned on all sides. Make sure the chicken is cooked through.
- Reduce the heat to low, and slowly pour in the heavy whipping cream. Stir well to combine the cream with the spices and chicken. Simmer for about 10 minutes, stirring occasionally. Don't cook this on high because the cream will explode if you do.
- Stir in the lemon juice, and let the curry simmer for another 5 minutes.
- Taste and adjust the salt and seasoning according to your preference.
- Serve the butter chicken curry with steamed rice or naan bread.
- Note: This simplified version does not include some traditional ingredients like yogurt, fenugreek leaves, and various spices used in a more elaborate recipe.
Mondo's Kickass Mexican Corn (Elote) Recipe

Ingredients
- Note: These amounts are approximate. I usually eyeball it all.
- Corn
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp butter
- salt
- pepper
- 1/2 tsp lime juice
- 1/2 tsp chili powder
- 1/2 cup Mayo
- 1/2 cup Sour Cream
- 1/2 tsp Sazon Goya (Optional)
- Pinch of Pepper (Optional)
- Flaming Hot Cheetos
Instructions
- Cook your corn: If using fresh corn, grill or boil until tender. If using frozen, follow package directions.
- Prepare the base: In a bowl, onion powder, garlic powder, melted butter, salt, pepper, lime juice, chili powder, Sazon Goya, mayonnaise, sour cream, and pepper.
- Assemble: Roll the corn or pour over the corn or mix with frozen/canned corn
- Add the crunch: Crush the Flaming Hot Cheetos into small pieces and sprinkle generously over the corn.
- Note: You can also use things like crushed hot buffalo pretzel bites, but Cheetos has the best texture
